Mash the Cauliflower

I was very hesitant to do a blog post on something other than a yummy treat....BUT I did it. I made a cauliflower creation that actually tasted delicious.

I got this inspiration from a co-worker, she said her 8 year old makes it all the time so I thought, "well if she can do it...."

haha

Twice baked cauliflower is the name of the game...I went through several recipes on Pinterest trying to find the one with the least amount of ingredients. Didn't want to stress myself out, you know what I mean?

I struggled with pictures this time....photography is not my forte.

As you can see, I chose the smallest cutting board and biggest pot I owned for this. I'm a natural...haha

The next step was to mash the cauliflower with your potato masher. uhh...what am I supposed to do when I don't have this so called potato masher?

Add some stuff and mix...then spread in a casserole dish. Check.

Add some more stuff to the top. Check.

I put it in the oven, then read over the directions to see how long I needed to bake it for. It was then, that I realized it said to bake COVERED. oh boy. It was a solid minute that I debated on putting the lid that came with the casserole dish over it or aluminum foil. I went with the latter. I didn't want to risk the plastic lid MELTING.

Anyway, I baked it and then ate it. It was good. Even my husband liked it.
